Sometimes I'm able to view my CPU Temperature, power usage, and other fields in AMD Adrenalin's performance tab. After a recent windows update I was able to view my CPU temp again, but then after a restart the CPU temp & other fields were gone again. Reinstalling Adrenalin doesn't consistently fix this issue, and even when I have the temp displaying correctly, it almost always disappears after restarting my computer. I'm wondering if I need to be launching AMD Adrenalin as an administrator by default, or if there's some weird issue that could be happening here. I see plenty of posts about this but no clear solution that fixed it

I would try using AMDs DDU tool to completely uninstall your drivers and then do a clean install of the Adrenalin software / drivers.

Is this the only way to fix this? I really don't want to do this again

If it were me, I'd try the previous release of Adrenalin because Windows Update has a habit of not playing nice with other software. I'm not sure it will work, but that's where I'd start. I'm well aware troubleshooting is a huge pain...

Is the driver not loading?  I have noticed at times that my driver will not load in windows at times. 

I have Icue not loading and adrenaline not loading. If manual launching the programs doesn’t load them, I will restart the computer and then things load properly.  Ever since my last windows update of the H2 that has been my issue.

hope this helps and yes I have reinstalled both programs. I have a feeling that this is an issue with windows and not amd.
