What is the expected uplift in performance when switching from a 3600x to a 5800x?

How much of a difference will I notice going from a Ryzen 5 3600x to a Ryzen 7 5800x

Generally speaking Yes, a lot. In reality, depends.

Do you do some sort of productivity work, content creation? Only Gaming?

What GPU do you have?

What games are you playing and at which resolution?

Refresh rate?

What is your board and cooling solution?

All of this matter.

I have a RT6600xt with a Asus B550M mb & a Corsair cooling system with an additional 3 120mm cooling fans and a 850w psu

For that gpu and board I would do the following:

Save every penny for the am5 jump and maybe, just maybe, if the 5600X3D comes to be true, that is what I would buy for now.

That is a 5800x,... why not put a stacked cache variant in there (5800x3d) for 64 more dollars, you know, still one of the best gaming cpus on the market now,  and kick the **bleep** out of every one you posted.
