The number of channels is how many sticks of memory the CPU can access simultaneously.
The more channels the higher total bandwidth you get and the more bandwidth the faster the memory performance.
The Ryzen CPU's are dual channel, 1 memory stick will work fine but 2 memory sticks will double your bandwidth.
Adding 2 more memory sticks will double the total memory but won't effect the bandwidth.
