Is there any way to see Minecraft’s performance in amd adrenalin? I can only seem to add the launcher.
Nope, not possible, at least in the Java Edition. ReLive and AMD Drivers have a problem with OpenGL games and unfortunately, AMD just doesn't care about this issue.
AMD GPUs had these problems for years, so there's no hope for them to fix it, sorry.
