Wattman settings has been restored due to unexpected situation / Power saving mode crash when gaming

Whenever I try to play more graphically demanding games, I get a "No Signal" and a Power Saving Mode message on my monitor right after the game starts and have to turn off the computer by holding the power button for ~5 seconds and after the restart I get the WattMan notification, I don't think it's related to power configurations itself, anyhow, they're set to High Performance in Windows configs.

My first thought was that my PSU wasn't enough for my RX580 Nitro+ and a R5 1600X, so I went from a 450w EVGA to a 600w EVGA and I was 100% sure it would fix my problem, and it did, for 2 days, now it's back and it's driving me crazy. I've tried various versions of the video drivers and a lot of tweaking in Wattman, including with fan power, but it's the same.

FurMark works fine, temperature won't even get over 66º so I don't think it's it's overheating.
