I'm just curious, because every article and video I see about motherboard vrm's always makes it about the CPU. I know the GPU has its own vrm's, so what role does the vrms for the motherboard play if any?

Not for a discrete GPU no, as it has its own VRMs. The motherboard's VRMs deal with the CPU and DRAM.
