Randomly I will check my Adrenaline Tuning Profile and the voltage will revert back to max (1.200) while the other settings I have placed are still there.

Any cause or solution I can do to prevent this?

Random Wattman voltage settings reset has been affecting Radeon software for years and it usually happens during cold boot (personal experience). 
It is not exclusive to RX 5000 series graphics cards

I suggest reporting the problem directly to AMD
