Did you try the Global Graphics -> Advanced Tab?

Is the option available in Radeon Pro Software for Enterprise 20.Q.3 Driver?
It should install and run on your GPU.

Are you certain that those Graphics Versus Compute options are available for RX5700XT at all?
It is not available for all AMD GPUs as far as I see it.

I think the Graphics/Compute option is available on Polaris based GPUs.
I will swap out the R9 390X later today and take a look - I will put an RX590 in since thats the latest Polaris based GPU available.
I cannot test with Adrenalin 2020 GUI/UI 20.8.3 with this many Radeon GPUs attached.
It is useless for MultiGPU and I get BSODS.

I upgraded one Windows 10 Pro 64 Bit 19.09 installation to version 2004.
I was able to install Adrenalin 2020 20.8.3 with the Adrenalin 2020 GUI/UI.
I did get a BSOD at the end of the during the install even though I had primary slot RX5700XTDisplaPort and HDMI outputs attached.
Anyhow - here is what I see in the Adrenalin 2020 20.8.3 GUI/UI:
Compute Option is there for the Radeon Pro DUO:
Not available on R9 390X:
No Compute/Graphics option on RX Vega 64 or 56:
It is there for the secondary GPU on the Radeon Pro DUO:
I will fit an RX590 next and see what that does.

Just spent 2 days trying to get AMD Drivers to install on Windows 10 Pro 2004 on new SSD.
It looks like that Compute versus Graphics option is only there for Fiji and Polaris GPUs.
The above screenshot is with Adrenalin 2020 20.9.1 installed on Windows 10 Pro 2004 with latest updates.

I cannot confirm that. I have a 3 GPU Workhorse with 3x RX580 and the most recent Windows 7 Adrenaline Driver installed.
I cannot select "Custom" so I cannot get to the required view to be able to select compute mode.
