I checked some of my power settings and had hibernation disabled so I re-enabled it to get my Hybrid Sleep option back.
POWERCFG.exe /hibernate ON
Went into my powerplans and set the Sleep option: Allow Hybrid Sleep to ON
Now my monitors are resuming from sleep without a driver crash.
NOTE: ULPS disabled to prevent random crash/display freeze.
