It appears that it's now listed in known issues, let's hope AMD will fix it:
I was getting the same driver timeout error in one particular spot in Siwa (AC Origins) near the lake, had to install old 20.12.1 driver...
I think it's another matter.
Video Docode isn't working when I look at the task manager while playing the game.

While playing Assassin’s Creed® Odyssey, driver timeouts or black screens may be experienced on some AMD Graphics products such as Radeon™ RX 480 Graphics when the user quickly navigates through the game menus or swiftly looks around an environment with their character.
It's probably fixed.

Fixed Issues
Driver timeouts or black screens may be experienced while playing Assassin’s Creed® Origins on some AMD Graphics products such as Radeon™ RX 580 Graphics.
I haven't confirmed it, but it's probably resolved.
Most of the time hard reset fixes the issue. Unplug all external devices from your computer. The only devices you should leave connected to your computer are your monitor, mouse, and keyboard if the computer is a desktop. Now Shut down your desktop and unplug the power cable from the desktop. In the case of a laptop unplug the charger and remove the battery if applicable. Now press and hold the power button down for approximately 15-20 seconds then plug in the power cable back to the desktop. Plugin the battery and charger back in case of the laptop and start the system and launch Assassin’s Creed Odyssey.
Tested 21.8.2, 21.9.2, result don't crash but textures artefacts:

100% BSOD or driver timeout (if you "alt-tabbet" game) on calling ship from the dock, I think meditate will do same. Maybe in next year amd will fix that. when broke again...will see. Can confirm 21.2.3 is ok in this game. Thanks for report.
