This issue has occurred with me multiple times, that my second monitor just up and goes away. For the first couple of times, support forums said to either reinstall drivers or disable crossifire which fixed the issue, but still it was super annoying. Now with the latest update of v24.4.1, there's simply no crossfire setting at all. I have no display on my second monitor and I have reinstalled drivers twice.

Are you referring to AMD Eyefinity or Multi-Display? Where one graphics card is capable of grouping multiple monitors together?

Because CrossFire was a completely different multi-GPU technology from 10-15 years ago that has since been discontinued.

Maybe you can post a screenshot of the Adrenalin software showing what setting you're trying to disable since it would not be called CrossFire.
