Is there any reason for me to update since I'm on an RX 6800 XT?
The latest Adrenalin drivers I see on AMDs website are 22.11.2, not sure where you are seeing these 22.12.1 drivers.
Personally I only download and install drivers from AMDs official website and avoid all other "Download driver sites" as you have no way to confirm their drivers are legit or malware infected.
As for whether you should install updated gfx drivers, look at the release notes to see if it addresses any issues you may be having or if it adds better support for any of the game(s) you may play. The decision is yours.

It's a driver specifically for the new rx7900.
Hmm, if it's specific to the just released card(s) then I would just wait for AMD to push out a general release of 22.12.1 for the rest of the gfx cards.
Update:
Actually, I just checked the release notes for 22.12.1 and they specifically state it is for the 7900 series of GFX cards only, so as I said before, wait until they release 22.12.1 or later for the older cards.

Nah, no need to update. It's just for the release of the 7900 series as stated by @goodplay . I think 22.12.2 will be for us common folk though.
The email I received yesterday (I have a 6600XT) from AMD said that Adrenalin 22.12.1 is available and contains stability improvements for end user reported issues, and also adds support for Radeon™ RX 7900 Series Graphics. The release notes do not say that it is for RX 790 series only. I confirm though that it will not install on 6000 series machines.
I suspect that AMD changed their minds, that there is a release in the offing with 6000 series bug fixes, but testing showed that it is not ready.
