I would use a Displayport MST hub like this Amazon.com: Monoprice 2-Port DisplayPort 1.2 to DisplayPort Multi-Stream Transport (MST) Hub, DP to .... 2 of the monitors are 1080p and 1 is 1440p.
After scouring the internet I cannot find anyone who has tested MST support with a Ryzen APU. Hope this is the right place to ask!

I've looked for spec sheets, every Reddit forums, nothing.
I will be ordering the monoprice adapter you mentioned and will test myself. Worth the $40 to get an answer...
