I am looking at the wx 2100 video card, but I would like to know if you HAVE to use displayport cables from the card to monitors that must have displayports on them. or can you use a cable that goes displayport from the card and changes to hdmi or dvi on the monitor.

I own a DisplayPort to HDMI cable, it works with 1080p panels fine. Most modern cards have 3 DP connections so its possible to run 3 HDMI panels or 3 DisplayPort panels.

Yes you can use (m)DP-DVI or (m)DP-HDMI adapters, but don't use the cheap ones, make sure you use one of the certified ones:
