Hey Red Team,
My buddy and I are currently looking around to add some new games to our repertoire and we were really interested in some recommendations for Co-Op games, or games that have a great Co-Op mode!
We've already played games such as:
And of course many more, but don't be afraid to share any game recommendations! Those might give you an example of some of the game styles that we like.

Army of Two Series
Resident Evil 5
Though these are all are shooter games.
Unraveled Series
Trine Series
I quite like Destiny 2. If you haven't played you'll have near neverending stuff to do.
Very difficult but very fun!
@blazek cuphead was SO hard. Played it for like 15 min and never went back 😂

Okay so, my partner and I are ALWAYS looking for co-op games to play. I'll definitely be following to see what other people say.
From the list you provided, we've played: It takes two, Sea of thieves, we were here too, and portal 2. It takes two was by far the BEST one. We wanna play it again in the future and switch characters because it was so fun.
Some others that I like or heard of - League of legends (personal favorite), OSRS (old school runescape, which is a lot of solo work to level up, but you can do bosses together once you get to a certain level), APEX, Valorant, V-rising (new and just came out, personally haven't tried it yet), Rust, Terraria, Overcooked, Moving out, and I could keep going by I'll stop there haha.
I feel like since I played It takes two, I've never found a game that fulfills me the same for a co-op experience.

I completely agree, even the art style and level design were something else entirely. I absolutely understand why it won Game Of The Year.
From the creators of it takes two there's also a way out. I felt like it was a much shorter play-through but we had a blast doing it.
Raymond Legends is also a fun one for two or more. We usually play it as four.
And then Unravel Two looks fun. Haven't had a chance to get to this one but in the meantime my kids have played through it twice.
