It seems no matter what I analyze I always get the same results, and that's with only one assembly instructions being run in ntoskrnl.exe? This is with the example executable that comes with uProf below.

I've updated to the new Windows 10 May 2020 update, so maybe that is the problem? Is anybody else having this issue?

This issue observed after Windows10 20H1 update. We have already noticed this issue and working on it. We will let you know here once the fix is ready.

Win10 20H1 (May 2020 Update)OS support is planned for upcoming uprof release (V3.3)

This is a known issue and team is working to resolve this issue.  Will update you once the release is available.

Could you please share the below details for better understanding.

   1. OS details
   2. AMDuProf  version.
   3. Output of command : "AMDuProfCLI.exe info --system"
   3. Application name.

In the meantime can you try to update your windows to latest stable release and see if the issue still persists
