Ryzen 9 5900X PBO settings and undervolting
i'm not sure how to do it in the bios

Nice do some stress testing and monitor temps and voltages. Let it idle for long periods too as part of testing.
If it gets unstable and crashes, try -0,075 or -0,05
If you want to be bold, try -0,11 or -0,12
The problem will be more during long idle periods for me, as it will crash.

If you are not comfortable in doing this, leave the board with its PBO stock settings, RoG come with them activated and set to AUTO, as long as you have thermal headroom, it will boost.
With stock settings I could squeeze past official boost values with a AIO Watercooler and undervolting. Read a bit more on the web and get a solid cooling solution for your R9.
As for the undervolting, its pretty simple, just follow this video. Just click play, it will start where you need.

You are right there, in the drop down isn't there a OFFSET option instead of AUTO and MANUAL?
Can you share the board model, maybe I can search a bit, but they normally look the same.
In the meantime, try to use the BIOS search option to find it.
