3950x Weird fluctuations. High temps.

Hi there.
I've recently built a new computer.
I have a 3950x CPU, in an MSI x570 Unify motherboard.
I am using a Noctua NH-U12A cooler. A corsair 1200W power supply. 
The temperatures are really high and act really weird.
They consistently and periodically jump -+10 degrees, making a consistent zigzag pattern on the graph all the time.  Even while the computer is mostly idle. Going as low as 54 degrees and as high as 75... My case fans have no idea what to do lol...
Take a look at this graph. Pretty sure this is not normal.

Any idea what's causing this and how to fix it?

You have an OC applied...  from a quick glance it's 4.825 GHz, so any background task that periodically hits the CPU will shoot those temps up.  If the OC is intentional then you probably need to tweak your fan curve since it's currently not enough to keep temps smooth.
