Unfortunately it's not possible to remove this context menu.

It was my problem too.
Open up regedit.exe through the start menu search or run box, and then browse down to the following key:
Double-click on the (Default) value in the right-hand side, and then add some dashes in front of the value to disable it. You should be able to right-click on the desktop and see that the item is removed.
It's a convenience for people who don't use the systray, or don't want to have to drill down several mouse clicks to bring up the console. It's never bothered me, and it's been the same for the last--oh, fifteen years or so...;)
I do believe the older Catalyst Control Center did not have this in the context menu, either that or it had the option to remove it from.
If I uninstall "AMD Settings" I assume I can have the same result, but obviously lose all the other functionality... The driver would remain intact though yes? Would the auto-update program remain intact?

Grab the excellent lightweight standalone ShellExView from Nirsoft.
Name: SimpleShlExt Class
Product: Radeon Setings
(previously called ACE Context Menu)
And right click > disable.
Thank you sarahnorthway, your solution solved this terrible design decision for me.
