I have a motherboard M4A78 processor DualCore AMD Athlon 64 X2 3100 MHz (15.5 x 200) 6000+ (Socket AM2 +) and DDR2-800 memory (2GB x 4) (400 MHz), my question is:
What is more powerful processor for this board and if you can put one socket AM3 compatible memory?

From them its a jump to fx series new motherboard and ddr3 needed.

your ram will work fine with the cpu, you may want to set up the ram timings manually as motherboard bios sets them fairly lax, but if you don't want to fiddle with the bios settings that's ok too. Ram timings are more important than speed. Install CPU-Z if you want to know what the ram timings need to be set to. It reads data on the ram and gives you the best settings for the ram .If the new cpu does not show in bios you will have to update the bios with your older cpu first. Updating bios can kill your board so you need to follow the instructions precisely. If you do update bios you need to reset it afterwards via the motherboard before it will work.
