My games will not work properly, it's very choppy.

You would need to upgrade your Windows to either 10 or 11 to get AMD Drivers support for your RX6500 GPU card.

AMD stopped supporting Windows 8/8.1 several years ago. So if Windows 7 or 10 AMD drivers doesn't work in your Windows 8.1 PC then you really have no choice but to upgrade to Windows 10 or 11.
