Switched from nvidia GPU to amd GPU, low resolution, only one monitor being picked up

I just switched from an Nvidia GPU to the AMD 7900 XTX GPU, and installed the drivers, and followed the instructions to a tee (from their website). I made sure to uninstall the Nvidia driver stuff beforehand. However, I am getting a low-resolution screen and only one of my monitors is being picked up.

I have tried variations of things now, and it still doesn't work. Can anyone help or suggest anything? Seems like this shouldn't be this hard and painful to set up.
