Multiple Monitor Misery

When I select single monitor in Win10 with the other monitors physically connected I get this!

Imgur: The most awesome images on the Internet

It's messing up my gaming as games like Doom keep switching monitors if I enable/disable extended monitors.

Is there any way to fix this?

This has been going on for several driver versions now. Not sure if it did it when I had two different monitors but I know it has been doing it since I switched out to a Acer XF270HUA and Asus VC239H.
