Screen resolution won't change due to update

I have a Sony Vaio laptop with an AMD Radeon HD3650 graphics card. Windows Updates has been pushing an update that messes with my screen resolution. The default is 1920x1080, but after the update it won't go higher than 1280x1024 making it look stretched out.

I tried System Restore a few times, which worked up until yesterday. I then tried a Driver Roll Back, which seemed to fix the problem. But last night, Microsoft pushed an update reverting the resolution back to 1280x1024. Roll back is now greyed out, so not an option anymore and System Restore won't go back further than today. My driver is no longer supported and I have no idea how to fix this.

Did anyone else have the same issue and if so, how did you fix it? This stretched out screen and lack of a permanent fix is getting on my last nerve.
